Turkey Patty Sandwich with Mixed Pepper Slaw - Final

Hey kiddos! I made this sandwich last Saturday afternoon for lunch :). I was in the mood for a burger with a little kick but didn’t have any buns at home and didn’t feel like eating red meat or cheese. So this was my concoction that was healthy and satisfying :).

Ingredients (serves 4-5):
1 lb. ground turkey
3 cloves pressed garlic
1 egg
1 tbsp fresh cilantro, chopped
Salt & pepper
8-10 slices of toasted bread or 4-5 hamburger buns (I use Udi’s Gluten Free Whole Grain Bread)
About 2 tbsp of your favorite salsa
3-4 thin slices of avocado per sandwich
Cooking spray
Mixed pepper slaw:
1 jalapeno, seeds removed and chopped
6-7 mini sweet peppers, chopped
2-4 pressed garlic cloves (use as much as you’d like here – if you haven’t noticed, I’m a garlic fan)
1 tbsp fresh cilantro, chopped
2 tbsp mayonnaise
Little salt and pepper to taste

Directions:

  • Prepare all of your peppers
  • Make mixed pepper slaw by combining all of the slaw ingredients above in a medium size bowl. Set aside
  • In a large mixing bowl, mix together your turkey, garlic, egg, cilantro and salt and pepper using your hands
  • Form meat into 4-5 patties
  • Thoroughly coat the bottom of a large skillet with cooking spray
  • Add in turkey patties and let cook on first side until you feel like it’s solid enough to flip without it falling apart
  • Flip patties over and cook until meat is cooked all the way through – you can spray some more cooking spray if you need it
  • Build sandwiches by spreading about 2 tbsp of your favorite salsa on bottom slice of bread, then top with avocado slices, 1 turkey patty and a generous helping of the mixed pepper slaw
  • I served with tortilla chips and salsa – mmmm :)
