Truffle oil, arugula and avocado are all things I’m obsessed with. I feel like these can go on almost anything and make it taste better. I’m still waiting for the day that I can try the real-deal – Truffles. I’m so intrigued by them that spending an entire season truffle hunting in Italy or France sounds like a dream come true. Maybe one day. Until then, truffle oil it is.
This salad is as easy as it gets. And these days I really value easy. If you consider this a tough recipe then I don’t know what to tell you. You literally add to a bowl, toss and eat. It sure tastes all fancy though! It pairs so well with tomorrows recipe (you’ll have to wait and see) and some wine. It’s really great as a side salad to anything. Arugula is also high in nutritional value (anti-oxidants, vitamins, minerals – all that good stuff), so try it out!
Ingredients: 1 serving
About 3 cups fresh arugula
1/2 avocado, cubed
About 1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper to taste
Splash of black truffle oil
- Combine all ingredients in a mixing bowl and toss
- Yeah…that’s about it.
