Peanut Butter & Fruit Sandwich (PB&F)

Why eat jelly when you can have the real thing? I love pb&j sandwiches, but I love pb&f sandwiches even more. So fresh and so sweet. I’m not a morning person…well, I’m not really an any time of the day person, but I’d say mornings are the worst. And most days I’d like to eat something more than a to-go bar for breakfast, so pb&f’s are perfect. They’re a quick and simple weekday breakfast. Literally takes a couple of minutes. It’s also a great twist on the traditional for your kids lunch box.

Ingredients:
2 slices of toasted bread (I use Udi’s Gluten Free Whole Grain Bread)
5-6 thin slices of banana
1 strawberry thinly sliced
About 5 blueberries
Peanut butter

Directions:

  • Prepare fruit and then build your sandwich
  • First put a layer of peanut butter on one slice of bread
  • Then top with banana and strawberry slices and your blueberries
  • I like to add a thin layer of peanut butter to the other slice of bread too, but that’s optional. Enjoy!
