Fruit Pizza with Citrus Mascarpone Cheese

I don’t eat enough fruit. Why don’t I take care of that by piling some on top of some mascarpone cheese, sugar and dough? Perfect. This fruit pizza was good. I mean really good. I liked it so much that I think I’ll serve it as a unique dessert at my next party. I hope enjoy it as much as I did!

Ingredients:
1 plain pizza crust (I used Udi’s gluten-free thin & crispy pizza crust)
Cinnamon
Brown sugar
8 oz. Mascarpone cheese
1 tbsp powdered sugar
Squeeze of orange
Squeeze of lemon
About 2 tbsp melted butter
Your choice of sliced fruit – I used pineapple, blueberries, strawberries, banana and raspberries

Directions:

  • Brush melted butter on pizza crust, sprinkle some cinnamon and brown sugar over top
  • Bake in oven at 375°F until brown sugar is melted and crust is a little crispy (about 10-15 mins, but keep an eye on it)
  • Combine mascarpone, powdered sugar, lemon and orange juice in a bowl
  • Spread mascarpone mixture on top of pizza crust and arrange sliced fruit on top as shown in picture and video
